Happy hump day everyone! You know what that means… two more days until the weekend! I know what y’all were thinking….
I’m a Computer Programming Nerd (I wish….!)
First off I want to start by saying that I went and got help on my Computer Science programming project from my TA and finished it! Seriously happiest day of my life… okay maybe not the happiest but I’m pretty darn excited. This class has been so much harder than I could have ever dreamed but with his help I’m hoping to make it through.
Tuesday Night Dinner Heartache…
Anyways what I really wanted to tell you all about was how excited I was for dinner last night. I had been planning all day on making Chef Chloe’s avocado pesto pasta. I even went out and got all the ingredients after one of my earlier classes so I could save some time- that’s how excited I was! Anyways I made the recipe and for some reason it did not turn out the way I thought it would! I truly believe that either my basil was bad or the avocado was not ripe enough. I have made avocado pasta in the past and absolutely loved it! I feel like there was something weird going on with a couple of my ingredients. But heck it didn’t keep me from eating it last night or having some of the leftovers for lunch today (can’t waste food right?) Anyways, I wanted to redeem myself by cooking something completely new this morning.
I have been on a complete oatmeal kick the past couple weeks! I wanted to try making my oatmeal a little differently this morning so I decided to try Pumpkin Pie Oatmeal! I love pumpkin pie so I figured why not? I looked at a couple different recipes to get an idea of the ratios to use but then just kind of put it together from there (improving in the kitchen-nice!) I really enjoyed it and it’s perfect for the fall (although it is 90 degress out today…). It will be cold soon enough!

- 1/2 water
- 1/2 unsweetened almond milk
- 1/2 cup old fashioned rolled oats (I used Bob Mill’s Gluten-free variety)
- 1/3 cup canned pumpkin
- 1/2 tsp cinnamon
- less than 1/4 tsp ginger
- less than 1/8 tsp nutmeg
- 1 tbsp pure maple syrup
Bring 1/2 cup of water and 1/2 cup of unsweetened almond milk to a boil in a medium/small sized pot. Once boiling, add 1/2 cup oats and reduce to medium/low heat. Let the oats heat for about 5 minutes then add pumpkin and spices. Let heat for another 5 minutes or so then add the maple syrup and mix. Remove from pot and enjoy!
*I kind of played around with the ratio of spices I used so feel free to use more/less.
Protein Shakes Rock!
Yesterday my sister, Laura, texted me asking what all I put in my protein shake. It got me thinking that others might have the same question… possibly not but I’ll tell ya anyways! For the past week or so I have been drinking protein shake right after I get home from the gym. I have been feeling a lot better having a mix of protein and carbohydrates right after my workout; it definitely shortens recovery time and helps rebuild your muscles after being broken down. Really helps when I wanna do things like this….(and have Cameron capture the moment). By the way this was my attempt to “plank” although it turned into a superman. Oh well 🙂
In my protein shake I put all the ingredients in a blender and blend until smooth (or almost smooth):
- 1 scoop Vega Sport Chocolate Protein powder (110 cal and 21g protein per scoop!)
- About 10-16 oz unsweetened almond milk
- 1-2 ice cubes
- 1/2 frozen or fresh banana
- 1/2-1 tbsp peanut butter (I like Earth Balance Creamy)
- other add-in ideas: Chia seeds, flaxseeds, frozen blueberries, rolled oats, other nut butter varieties
Well I’m about to change and head to the gym- it’s Zumba day! I seriously love it. After Zumba I’m planning on either doing a whole bunch of abs or maybe a full body weight workout? I’m just playin it by ear 🙂
